Picadillo Recipe - Ground Beef Recipe

Check out my Instagram: lilYESENIA When I made these jumbo sweet and savory treats I had them in mind because I saw a video of @YiaMedina, who is a Puerto Rican chef I follow, making them.  They are called Piononos ("PIO-NO-NOS"). They also remind me of Pastelon, which have the same ingredients, but is layered and put together like a la-sag-na. I made some picadillo and rice for dinner one night and had leftover picadillo for the next day. I also had some green plantains that I did not use for a few days, so they became yellow and ready to use as maduros (sweet plantains).  You can definitely sub the ground beef for ground turkey, or ground chicken. anything your heart desires :).  Picadillo (my version). Apple Banana Nut Muffins Recipe

Recipe⚡️ Makes 6 Jumbo or 12ish Regular  • 1 ½ cups flour of your choice • ⅔ cup white sugar • 1 teaspoon cinnamon (add more if you like) • 1 teaspoon baking powder • 1 teaspoon baking soda • ¼ - ½ teaspoon salt • 3 ripe bananas, mashed • 1 egg, room temp • 1 teaspoon pure vanilla extract • 1 stick unsalted butter, melted • ⅓ cup brown sugar (optional) • 1 apple, chopped (optional) Crunch Topping: • ⅓ cup brown sugar • 1-2 tablespoons flour • 2 tablespoons butter • ⅓ - ½ cup chopped pecans Mix all dry ingredients (first 6 ingredients) in a bowl. Add mashed banana, egg and vanilla. In a pan, add chopped apples, stick of unsalted butter, brown sugar, pinch of salt and dash of cinnamon. Remove from heat once it bubbles and let it cool. Once cool, mix together with banana batter. Do not over mix. You can add nuts to the batter at this point. Pour into buttered muffin pan.
